The Ninth Day of Craftmas

Who knew you could make delicious, soft cookies with tea? We did! Give your guests a warm welcome this season with these tasty treats.

INGREDIENTS:

For the cookies:

1/2 cup of Pure Leaf sweet tea

1/2 cup loosely packed fresh mint leaves

1 ¾ cups granulated sugar

1 cup butter

2 eggs

1 tablespoon lemon zest

3 cups all-purpose flour

4 teaspoons baking powder

1 teaspoon salt

 

For the glaze:

1 black tea bag

6 fresh mint leaves

3/4 cup water

2 ½ cups powdered sugar

Food coloring (optional)

DIRECTIONS:

  1. Preheat oven 350°. Line 2 baking sheets with parchment paper.
  2. Cream butter, sugar, and mint together and mix until until light and fluffy. Add the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl. Add the tea and beat until combined, then add the lemon zest and beat. Beat in the flour, baking powder and salt slowly until everything is combined, scraping down the sides of the bowl as needed.
  3. Scoop 2 tbsp. sized mounds of dough onto the prepared baking sheets. Or if you’re feeling ambitious, make leaf shapes with your hands. Bake the cookies until puffed up and golden around the edges, about 10 – 12 minutes. Cool and glaze.
  4. For the Glaze: Put the tea bag and mint leaves in a measuring cup and pour ¾ cup of boiling water over. Leave to steep for 5 minutes, then remove the tea bag and cool.
  5. Sift the powdered sugar into a bowl and add about 5 tbsps. of the tea, whisking until you have a glaze the consistency of heavy cream. Place some foil (or the parchment from the baking sheets) under the cooling racks to catch drips and paint the glaze on the cookies. Add green food coloring to the glaze if you want to decorate them like leaves!
