The Second Day of Craftmas

Looking for a tea-tastic treat that’s sure to impress? This sweet tea pie is sure to do the trick.

 

2 c. sugar
2 tbsp. cornmeal
1 tbsp. flour
1/8 tsp. salt
1/2 c. butter, melted
1/4 c. sweet tea
1 tbsp. white vinegar
1/2 tsp. vanilla extract
Zest of 1 lemon
4 Eggs, beaten
1 pastry pie crust (9-inch)
1 tbsp. Powdered sugar

Preheat the oven to 350. Then whisk together cornmeal, flour, sugar, salt, butter, vinegar, vanilla extract and tea. Add lemon zest and eggs. Once combined, pour into crust. Bake for 50-55 minutes on a baking sheet. Cool and top with powdered sugar. If you decide to make your own dough, you can use excess dough cut from the edges of pie dish to cut leaf shapes. Just carve the design on top with knife or toothpick, egg wash and bake separately to be added to pie after cooling!
