65 g almond flour
75 g egg whites
60 g caster sugar
Green food coloring paste

Filling

100g white chocolate, chopped
20g butter cut into small pieces

For the macarons, mix together icing sugar, almond flour and food colouring paste. Whisk the egg whites in a mixer until they begin to hold their shape, then add the caster sugar and continue to whisk until you have a stiff merengue.
Fold in the dry ingredients, then beat vigorously together.
Put the mixture in a piping bag. Line a tray with baking paper and pipe small dots of the mixture.
Dry the macarons for 25 minutes, then bake in pre heated oven at 155 C. for 10 -12 minutes with the fan low.
For the filling, heat the cream until beginning to boil. Remove from heat and add chocolate. Leave for a minute, then stir until smooth. Gradually beat the butter in before finishing with the matcha powder. Set aside to cool
When cool, match up equally-sized macarons, and use a small spoon to sandwich them together with filling. Refrigerate for 24 hours. Serve at room temperature.
